Chilled cucumber soup shots with spicy crab

Celebrate the season with zesty crab and cucumber soup shots.
Ingredients:
  • 1 telegraph cucumber, peeled, seeds removed, roughly chopped
  • 1 avocado, flesh roughly chopped
  • 4 spring onions, trimmed, roughly chopped
  • 63.00 gm lime juice
  • 60.00 ml coriander leaves
  • 250ml coconut cream
  • 18.40 gm canola oil
  • 2 tsp sambal oelek (see note)
  • 250.00 ml fresh crabmeat (see note)
Instructions:
  • Combine cucumber, avocado, spring onion, 2 tablespoons lime juice, and 2 tablespoons coriander in a blender with 1 cup (250ml) iced water. Blend until smooth, season to taste. Transfer to a large bowl, mix in coconut cream, adjust seasoning, and chill for at least 30 minutes.
  • Mix together the oil, sambal oelek, crab, and 1 tablespoon lime juice in a bowl. Finely chop 1 tablespoon of coriander leaves and add to the crab mixture. Season with salt, stir well, and serve the soup in small cups or shot glasses topped with a spoonful of spicy crab.
