Chilled cucumber soup

Perfect British summer menu for garden parties or picnics!
Ingredients:
  • 60 g unsalted butter
  • 1 onion
  • 3 cucumbers
  • 1.5 litres organic chicken stock
  • ½ a bunch of fresh chives
  • ½ a bunch of fresh parsley
  • 2 lemons
  • 200 ml single cream
Instructions:
  • Peel and dice the onion, and roughly chop the cucumbers. Sauté the onions in melted butter in a large pan over medium heat for 4 to 5 minutes until softened. Stir in the cucumbers and cook on low for 5 minutes. Pour in the stock, bring to a boil, then simmer. Season with salt and pepper, let it simmer for 5 minutes. Stir in chopped chives, parsley, lemon juice, and cook for another 5 minutes. Blend until smooth. Cool, refrigerate, then whisk in cream, season, and serve.
