Spicy potato fritters: a taste sensation!
Ingredients:
  • 300g desiree potatoes, peeled, grated
  • 125.00 ml reduced-fat pizza cheese
  • 1 long red chilli, finely chopped
  • 1 tsp fresh thyme leaves
  • Baby rocket, to serve
  • Chopped red chilli, to serve
  • 99.00 gm self-raising flour
  • 2 eggs
  • 128.75 gm milk
Instructions:
  • Create a simple batter by sifting flour into a bowl, making a well in the center, whisking milk and eggs together in a jug, adding the mixture to the flour, and whisking until smooth.
  • Squeeze excess moisture from the potato using your hands, then mix it with cheese, chili, and thyme into the batter.
  • - Heat up a tablespoon of oil in a frying pan over medium heat. - Form 4 fritters using heaped tablespoonfuls of mixture and cook for 3 minutes on each side, until they are golden and cooked through. - Repeat the process to make a total of 12 fritters. - Serve your fritters with baby rocket and a side of chili.
