Chilli and prosciutto cauliflower

Irresistible cauliflower side with anchovies, prosciutto, and chili for a flavorful kick.
Ingredients:
  • 600g cauliflower
  • 27.30 gm extra-virgin olive oil
  • 100g prosciutto, chopped
  • 6 anchovies, chopped
  • 1 long red chilli, deseeded, finely chopped
  • 2 garlic cloves, crushed
  • 82.50 ml fresh basil leaves, torn
  • 1/2 lemon, juiced
Instructions:
  • Bring a large saucepan of water to a boil over high heat. Add cauliflower and cook for 10 to 15 minutes until tender. Drain and set aside.
  • In a large non-stick pan over medium-high heat, heat oil. Add prosciutto, anchovies, and chili. Cook for 2 minutes until prosciutto begins to turn golden, stirring frequently. Then add garlic and cook for an additional minute, stirring constantly.
  • Place cauliflower into the sizzling pan. Sauté, stirring frequently, for 2 minutes until cauliflower is warmed. Remove pan from heat and mix in fresh basil and 1 1/2 tablespoons of zesty lemon juice. Season generously with salt and freshly ground black pepper. Serve and enjoy!
