Mango, scallop & prosciutto salad

Experience the unique flavor combination of mango, scallops, chili, and prosciutto for a tantalizing dish.
Ingredients:
  • 20 (about 500g) scallops, roe attached
  • 30.00 gm caster sugar
  • 18.40 gm vegetable oil
  • 6 slices prosciutto, halved crossways
  • 42.00 gm fresh lime juice
  • 2 ripe mangoes, cheeks removed, flesh cut into 1cm-thick slices
  • 1 small red onion, halved, thinly sliced
  • 2 fresh long red chillies, halved, deseeded, thinly sliced lengthways
  • 82.50 ml loosely packed fresh coriander leaves
Instructions:
  • Place the scallops on a large plate and generously sprinkle with 2 teaspoons of sugar. Heat 2 teaspoons of oil in a large non-stick frying pan over high heat. Add the scallops, sugar-side down, and sear for 2 minutes. Sprinkle with another 2 teaspoons of sugar, flip, and cook for an additional 1-2 minutes until golden and perfectly cooked. Transfer to a serving plate.
  • Crisp the prosciutto in the pan for about 1 minute per side, then set aside.
  • In a small bowl, mix the rest of the sugar with oil and lime juice.
  • Place the mango and onion elegantly on serving plates. Add the scallops, chilli, and prosciutto on top. Drizzle with the zesty lime dressing. Finish with a sprinkle of fresh coriander leaves and serve promptly.
