Grilled scallops with bitters and mango salsa

Ingredients:
  • 1 ripe large mango
  • 1 small fresh green chilli, finely chopped
  • 20.00 ml finely chopped red onion
  • 1 tsp aromatic bitters (Angostura brand)
  • 24 scallops in their half shell
Instructions:
  • Preheat the grill to medium heat and line 2 baking trays with non-stick baking paper.
  • Carefully slice the cheeks off the mango next to the seed, then peel off the skin. Separate the rest of the flesh from the seed, finely dice it, and put it in a small bowl. Mix in the chili, onion, and bitters until well combined.
  • Carefully scoop out the scallops from the shells using a teaspoon, making sure to keep the shells clean. Place the scallops back into the shells, then generously drizzle them with fresh lemon juice. Arrange them on lined trays and grill under a preheated grill for 3-5 minutes until they are tender and opaque.
  • Drizzle the bitters & mango salsa over the scallops in their shells, sprinkle with salt and pepper, and serve immediately.
