Scallops with ginger and shallots

Grilled scallops with a flavorful ginger-soy dressing.
Ingredients:
  • 20.00 ml finely grated fresh ginger
  • 60ml (1/4 cup) Japanese sushi & sashimi soy sauce
  • 60ml (1/4 cup) sushi seasoning
  • 55g (1/4 cup) caster sugar
  • 30 (about 500g) scallops, roe removed
  • 18.20 gm peanut oil
  • White pepper
  • Peanut oil, extra, to grease
  • 3 shallots, ends trimmed, thinly sliced
Instructions:
  • Combine ginger, soy sauce, sushi seasoning, and sugar in a bowl. Whisk vigorously until sugar dissolves.
  • In a bowl, mix the scallops with oil and season with white pepper. Preheat a barbecue grill or chargrill on high heat. Grease the grill with extra oil. Cook one-third of the scallops for 20-30 seconds on each side until cooked through. Transfer to a separate bowl. Repeat with the remaining scallops in two more batches.
  • Spoon scallops onto serving spoons, drizzle with dressing, and top with shallots before serving.
