Steamed scallops with ginger, chilli and shallots

Ingredients:
  • 2 green shallots
  • 40.00 ml shaoxing or dry sherry
  • 42.00 gm soy sauce
  • 1 tsp sesame oil
  • 12 scallops, in the half shell
  • 5cm piece ginger, peeled, cut into thin matchsticks
  • 1 long red chilli, seeds removed, finely sliced
  • Coriander leaves, to garnish
Instructions:
  • To make green shallot curls, thinly slice diagonally and soak in ice water for 30 minutes. Drain and reserve.
  • Combine the rice wine, soy sauce, and sesame oil in a small bowl.
  • Place scallops in a single layer on two large bamboo steamer baskets. Add ginger and 1 teaspoon of sauce mixture to each scallop. Stack the baskets over a wok of simmering water, cover, and steam for 5 minutes until cooked through.
  • Sprinkle scallops with chili, green shallots, and coriander, then serve promptly.
