Steamed scallops with ginger

Ingredients:
  • 5cm-piece fresh ginger, peeled, cut into thin matchsticks
  • 18.20 gm peanut oil
  • 21.00 gm fresh lime juice
  • 10.60 gm soy sauce
  • 1 small fresh red birdseye chilli, \tfinely chopped
  • 1 garlic clove, crushed
  • Pinch of salt
  • 6 scallops, in the half shell
  • 2 tsp sesame oil
  • 20.00 ml coarsely chopped fresh coriander
Instructions:
  • Mix together the ginger, peanut oil, lime juice, soy sauce, chili, garlic, and salt in a small bowl. Put the scallops in a 30cm-diameter bamboo steamer basket and spoon some of the ginger dressing over each scallop. Seal tightly with the lid.
  • In a medium wok over high heat, boil 5cm of water. Lower the heat to medium-high, then place the steamer basket above the water. Steam until the scallops are opaque, about 5 minutes.
  • Plate the scallops elegantly, then delicately drizzle with fragrant sesame oil. Finish with a sprinkle of fresh coriander and serve promptly.
