Try these tasty grilled scallops and shrimp skewers brushed with a flavorful spicy butter blend for a delicious seafood meal.
Ingredients:
  • 1/2 cup butter
  • 2 tablespoons finely chopped onion
  • 2 teaspoons seafood and fish seasoning, Cajun seasoning or Creole seasoning
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
  • 18 large sea scallops (1 lb.)
  • 12 large fresh shrimp (3/4 lb.), shelled, tails left on, deveined
Instructions:
  • In a small, heavy saucepan, gently melt the butter over low heat until the milk solids settle at the bottom. Remove any foam from the top. With care, transfer the clear, golden liquid (clarified butter) to another small saucepan, leaving behind the milk solids.
  • In a saucepan, melt the butter until clarified, then stir in the onion, seafood and fish seasoning, garlic powder, and hot pepper sauce until well combined. Place the scallops and shrimp in a 12x8-inch (2-quart) glass baking dish and pour the flavorful butter mixture on top, ensuring everything is coated evenly. Allow the dish to sit at room temperature for 30 minutes for the flavors to meld before cooking.
  • Preheat the grill and lightly oil the grill rack. Skewer 3 scallops and 2 shrimp alternatively onto six metal skewers. Place kabobs on the grill over medium heat and cook for 6 to 10 minutes until scallops are opaque and shrimp turn pink, flipping once and brushing with butter mixture. Reheat butter mixture if needed. Boil any extra butter mixture and serve with the kabobs.
