Spicy beef and kidney bean chili over fluffy rice - a budget-friendly, flavorful meal.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 20.00 ml ground coriander
  • 5.00 gm ground cumin
  • 1 tsp ground chilli powder
  • 500g extra trim beef mince
  • 400g can diced tomatoes
  • 125.00 gm water
  • 420g can red kidney beans, rinsed, drained
  • 266.00 gm Basmati rice (see note)
  • 77.55 gm extra light sour cream, to serve
  • fresh coriander leaves, to serve
Instructions:
  • In a large frying pan over medium heat, heat oil. Sauté onion and garlic for 5 minutes until onion softens slightly. Stir in coriander, cumin, and chili powder; cook for 1 minute. Increase heat to high, add mince, and cook for 4-5 minutes until browned.
  • Combine juicy tomatoes, fresh water, and hearty beans in a pan. Allow it to gently simmer, covered, over low heat for 5 to 10 minutes.
  • Cook the rice as instructed on the packet until it is tender.
  • Plate the rice and generously top it with chili beans, a dollop of sour cream, and a sprinkle of fresh coriander leaves.
