Make budget-friendly, flavor-packed Mexican smoked chili beans.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium red onion, finely chopped
  • 250g piece bacon, cut into 1cm pieces
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 2 tsp Mexican chilli powder
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 141.25 gm smokey barbecue sauce
  • 20.00 ml cider vinegar
  • 82.50 ml roughly chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Add onion and bacon, cook until onion softens, about 5 minutes. Stir in beans and chili, cook until fragrant, about 1 minute. Add tomato, sauce, vinegar, and 1/2 cup cold water. Bring to a boil, then reduce heat to low. Simmer uncovered for 20 minutes until thickened. Stir in parsley and serve.
