Fiber-rich bean dish packed with flavorful goodness.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, finely chopped
  • 125g middle bacon rashers, trimmed, chopped
  • 300g beef mince
  • 3/4 tsp dried chilli flakes
  • 2.50 gm smoked paprika
  • 400g can Cannellini Beans, drained, rinsed
  • 555g can baked beans in bbq sauce
  • 8.00 gm brown sugar
  • 11.80 gm Dijon mustard
  • 82.50 ml finely chopped fresh flat-leaf parsley
  • Thickly sliced bread, toasted, to serve
Instructions:
  • In a large saucepan over medium-high heat, sauté onion and bacon in oil until onion is tender. Add mince and cook, stirring occasionally, until browned and fully cooked, about 7 to 8 minutes.
  • Sprinkle in chili and paprika, then sauté until aromatic. Mix in cannellini beans, baked beans, 1⁄2 cup water, sugar, and mustard. Let it come to a boil, then lower the heat to a simmer. Cook gently for 5 to 7 minutes until it thickens. Finally, fold in half of the chopped parsley.
  • Sprinkle beans with the rest of the parsley and enjoy with toast.
