Elevated Aussie classic with beetroot relish and smoky BBQ sauce.
Ingredients:
  • 600g beef mince
  • 1 small brown onion, finely chopped
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 45.20 gm Smoky barbecue sauce
  • 36.40 gm olive oil
  • 4 canned pineapple rings, drained
  • 2 iceberg lettuce leaves, shredded
  • 165.00 ml beetroot relish
  • 4 damper rolls, split
  • 1 tomato, sliced
  • Extra Smoky barbecue sauce, to serve
Instructions:
  • Mix together the mince, onion, garlic, tomato paste, parsley, and barbecue sauce in a bowl. Season with salt and pepper. Divide the mixture into 4 equal portions. Roll each portion into a ball, then shape into 1cm-thick patties. Arrange on a plate lined with baking paper, cover, and refrigerate for 1 hour.
  • Heat 1 tablespoon of oil on a hot barbecue or large frying pan over medium heat. Cook the patties for 4 to 5 minutes on each side until golden brown and cooked through. Place on a plate, cover loosely with foil, and let them rest for 5 minutes before serving.
  • Heat the remaining oil on a hotplate. Cook the pineapple for 1 to 2 minutes on each side until golden and caramelized. Then cook the eggs on the hotplate for 2 minutes or until they reach your desired level of doneness.
  • Place the lettuce, patties, beetroot relish, tomato, pineapple, and eggs on the bottom halves of the rolls. Cover with the top halves of the rolls. Serve alongside barbecue sauce and extra beetroot relish.
