Smoky marinated veggies make these vegetarian fajitas a flavor explosion with avocados, bell peppers, and onions.
Ingredients:
  • 1.3333333730698 cups water
  • 3 tablespoons olive oil
  • 2 tablespoons liquid smoke flavoring
  • 2 (1 ounce) packages fajita seasoning
  • 4 large avocados - peeled, pitted, and sliced into 1/2-inch wedges
  • 4 large bell peppers - stemmed, seeded, and sliced into 1/2-inch wedges
  • 1 extra large onion, sliced into rings and rings separated
  • 12 (6 inch) flour tortillas
Instructions:
  • Combine water, oil, liquid smoke, and fajita seasoning in a bowl. Transfer the mixture to a resealable plastic bag. Add avocados, bell pepper, and onion. Coat the ingredients with the marinade, removing excess air from the bag before sealing. Marinate in the refrigerator for 1 hour to overnight, turning occasionally.
  • Preheat the oven to a cozy 225 degrees F (110 degrees C), then wrap the stack of tortillas in aluminum foil and let them warm up in the oven.
  • Preheat the grill to medium heat and brush the grate lightly with oil. Drain the marinade from the vegetable mixture and place on a plate. Separate the avocados from the onions and bell peppers.
  • Grill onions and peppers in a single layer until tender, about 5 to 10 minutes, turning occasionally with tongs. Transfer to an oven-proof pan, cover with aluminum foil, and keep warm in the oven.
  • Grill avocados in a single layer until nicely browned on both sides, approximately 5 minutes.
  • Wrap the creamy avocado and onion mixture in tortillas, then roll or fold them to encase the delicious filling.
