Grilled marinated mushrooms, peppers, and onions paired with creamy goat cheese and decadent avocado create a delicious and versatile side dish.
Ingredients:
  • 6 portobello mushroom caps
  • 4 red bell peppers, cored and quartered
  • 1 red onion, thickly sliced
  • 0.5 cup olive oil
  • 2 limes, juiced
  • 2 tablespoons grill seasoning
  • 1 pinch cayenne pepper, or to taste
  • 2 tablespoons balsamic vinegar
  • 1 avocado - peeled, pitted, and cubed
  • 0.5 cup crumbled goat cheese
  • freshly ground black pepper to taste
  • 2 tablespoons finely chopped fresh basil
Instructions:
  • In a 9x13-inch baking dish, combine mushrooms, red bell peppers, and red onion. In a small bowl, whisk together olive oil, lime juice, grill seasoning, garlic, and cayenne pepper. Pour the mixture over the vegetables and toss to coat. Let the vegetables marinate for at least 30 minutes before cooking.
  • Prepare the grill by heating to medium heat and lightly oiling the grate.
  • Strain vegetables from the marinade, allowing the extra to drip off. Keep the rest of the marinade for later use.
  • Grill vegetables until tender, about 5 minutes. Transfer to a platter. Drizzle with remaining marinade and balsamic vinegar. Top with avocado, goat cheese, salt, pepper, and basil before serving.
