Chilli chicken noodles in broth

Whisk your taste buds to Asia with a simple and savory chicken noodle soup made with only six ingredients.
Ingredients:
  • 137.50 gm sweet chilli sauce
  • 65.63 gm soy sauce
  • 500g chicken breast fillets, halved lengthways
  • 36.40 gm peanut oil
  • 1 litre chicken style liquid stock
  • 440g packet shelf-fresh flat Thai noodles
  • 2 green onions, finely sliced
Instructions:
  • In a medium glass or ceramic bowl, mix together 1/3 cup sweet chilli sauce and 2 tablespoons soy sauce. Season with pepper, add chicken, and toss to coat. Let it marinate for 10 minutes.
  • In a non-stick frying pan over medium heat, heat oil. Add chicken and cook for 5 to 6 minutes on each side until fully cooked. Transfer to a chopping board and cover to keep warm.
  • In a medium saucepan, combine stock and 2 cups of cold water. Bring to a boil over high heat, then add noodles and cook for 1 to 2 minutes until just tender. Using a fork, gently separate noodles. Stir in remaining soy sauce and season with salt and pepper. Divide broth and noodles into bowls, top with sliced chicken, drizzle with remaining sweet chili sauce, sprinkle with green onions, and serve.
