Ingredients:
  • Pinch salt
  • 321.88 gm milk
  • 40g unsalted butter, melted
  • 255.00 gm vegetable stock
  • 125.00 gm white wine
  • 250.00 gm water
  • 400g salmon fillets, cut into bite size pieces (2cm x 2cm bits or a little larger)
  • 12 small scallops, cut in to bite size pieces
  • 8 tiger prawns, peeled and cut in to bite size pieces
  • 25g butter, unsalted, chopped
  • 40.00 ml plain flour
  • 300ml milk
  • 1 tsp lemon zest
  • 20.00 ml dill, finely chopped
  • 20.00 ml chives, finely chopped
  • 1/2 tsp garlic, crushed
  • 40.00 gm white wine
  • 3 limes, for garnish
Instructions:
  • Combine flour and salt, create a well in the centre. Mix milk and eggs, then slowly pour over the flour, whisking to combine. Whisk in butter. Refrigerate crepe mix for 30 minutes to 1 hour to allow air bubbles to relax.
  • Heat a bit of butter in a pan over medium heat and add around 1/4 cup of crepe mix. Swirl the pan to evenly coat it with the mixture. Cook each side, then set the crepe aside. Repeat with the remaining crepe mix until used up.
  • In a saucepan, combine vegetable stock, wine, and water, bringing it to a gentle simmer. Add in the seafood and cook until done. Drain the mixture and set it aside.
  • Create a flavorful Béchamel sauce: Gently melt butter in a pan, then stir in flour and cook for 3 minutes. Slowly pour in the milk while stirring continuously until it thickens. Introduce the rest of the ingredients and gently cook for 2 minutes. Season with salt and pepper, and gently fold in the seafood, heating for 1 minute until warmed. Remove from heat and enjoy!
  • Fill the center of a crepe with the seafood béchamel sauce, fold it over, and generously drizzle more sauce on top. Garnish with fresh lime before serving.
