Shrimp Crêpes

Cheesy seafood-stuffed shrimp crêpes, baked in a creamy sauce for a delicious meal.
Ingredients:
  • cooking spray
  • 1.5 cups milk
  • 1.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 1.5 cups water
  • 0.25 cup all-purpose flour
  • 4 cloves garlic, minced
  • 2 pounds shrimp, peeled and deveined
  • 8 ounces lobster meat
  • 1 tablespoon lemon juice
  • 1 pinch cayenne pepper
  • 2 tablespoons mayonnaise
  • 1 tablespoon all-purpose flour
Instructions:
  • Prepare a 9x12-inch baking dish by spraying it with cooking spray.
  • In a large bowl, use an electric mixer to beat eggs and milk until frothy, about 2 minutes. Add flour and salt, then beat for another 2 minutes until well combined.
  • Preheat a nonstick skillet over medium heat. Pour 1/4 cup of batter into the skillet, swirling it to create a thin, even layer. Cook until the top is set and the bottom is lightly browned, approximately 4 minutes. Gently loosen the edges with a spatula, flip the crêpe, and cook for an additional 2 minutes until lightly browned.
  • Combine water, flour, and salt in a bowl and whisk until smooth.
  • In a nonstick skillet over low heat, gently sauté butter and garlic until garlic turns golden brown, about 7 minutes. Introduce shrimp and lobster meat into the skillet; stir, cover, and cook until shrimp are vibrant pink and fully cooked, about 5 minutes. Finish by adding lemon juice and cayenne pepper; stir, cover, and let cook for an additional 5 minutes.
  • Combine the water-flour mixture with the shrimp mixture, then mix in Parmesan cheese until thickened over medium heat, about 1 minute. Spoon the shrimp filling onto each crêpe, roll them up, and place them in the prepared baking dish.
  • Preheat the oven to 350°F (175°C) for the perfect bake.
  • Prepare the sauce by mixing milk, mayonnaise, and flour in a small saucepan. Cook and stir over medium heat until it bubbles, for about 2 to 3 minutes. Drizzle the sauce over the filled crêpes.
  • Bake in the preheated oven for 25 to 30 minutes until the crêpes are cooked through and the sauce is bubbling.
