Cajun Shrimp Crepes

Elevate crepes with Cajun shrimp, peppers, onions, and white wine sauce.
Ingredients:
  • 1 cup milk
  • 0.66666668653488 cup all-purpose flour
  • 3 eggs
  • 0.5 teaspoon granulated garlic
  • 1 pinch salt
  • 0.25 cup butter
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped onion
  • 1 clove garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 0.5 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons dry white wine
Instructions:
  • In a blender, mix milk, flour, and eggs until smooth. Blend for 1 minute on high speed. Allow batter to rest for 30 minutes.
  • Preheat an 8-inch nonstick skillet over medium heat. Pour approximately 3 tablespoons of batter into the center, swirling the skillet to spread it evenly. Cook until the top is dry, for about 45-60 seconds. Flip and cook for another 15-20 seconds. Transfer the crepe to a plate and stack. Repeat with the rest of the batter, saving leftovers for later use.
  • In a skillet over medium heat, melt 2 tablespoons of butter for the filling. Sauté bell peppers and onion until tender, about 5 minutes. Add garlic and cook until fragrant. Then, stir in the remaining butter, shrimp, and Cajun seasoning.
  • Combine cream, flour, and Cajun seasoning, then gradually add to the shrimp mixture. Cook and stir until slightly thickened for about 2 minutes. Pour in white wine and continue cooking until heated through and thickened to your liking, for 2 to 5 minutes more.
  • Fill each crepe with the delicious shrimp mixture and either roll them up, or fold them into halves or quarters.
