Effortless roast pork with zesty tabouleh, no cooking needed - a delightful meal in moments!
Ingredients:
  • 500.00 ml chopped fresh flat-leaf parsley leaves
  • 165.00 ml chopped fresh mint leaves
  • 4 tomatoes, seeded, finely chopped
  • 1/2 small red onion, finely chopped
  • 1 long red chilli, finely chopped
  • 400g can chickpeas, drained, rinsed
  • 86.63 gm lemon juice
  • 75.08 gm extra virgin olive oil
  • 150g shaved pepper-crusted roast pork
  • 4 soy and linseed rolls
Instructions:
  • Combine the vibrant flavors of parsley, mint, tomato, onion, chili, and chickpeas in a generous mixing bowl.
  • In a jug, vigorously mix lemon juice and oil with a fork. Season with salt and pepper, then generously drizzle over tabouleh. Mix well to combine all flavors.
  • Pair the tabouleh with succulent pork and warm bread rolls.
