Warm Mexican chili-cheese dip with tortilla toasts for a creamy, indulgent snack.
Ingredients:
  • 1 tomato
  • 30g butter
  • 1 small brown onion, finely chopped
  • 2 fresh jalapeno chillies, seeded, finely chopped
  • 1 tsp Mexican chilli powder
  • 300g ctn sour cream
  • 160g (2 cups) coarsely grated cheddar
  • 40.00 ml chopped fresh coriander
  • Tortilla wedges, toasted, to serve,
Instructions:
  • Make a small cross at the base of the tomato, then cover it with boiling water in a heatproof bowl. Let it sit for 2-3 minutes to soften. Peel the tomato on a chopping board, discard the skin, and chop the flesh finely after removing the seeds.
  • Melt butter in a medium saucepan over low heat. Sauté onion and chili for 5 minutes until soft but not colored. Stir in garlic and chili powder; cook for 30 seconds until aromatic.
  • Mix in the sour cream and cheddar until the cheddar melts, about 2-3 minutes. Add the tomato and coriander. Transfer to a heatproof serving bowl and enjoy with tortilla wedges.
