Spicy chili and cheese, a must-have for your Mexican fiesta!
Ingredients:
  • 3 flour tortillas
  • 20g butter
  • 1 small onion, finely chopped
  • 1-2 fresh long green chillies, finely chopped
  • 170g sour cream
  • 145g cheddar cheese
  • Coriander, to serve
Instructions:
  • Preheat your oven to 210°C. Cut each tortilla into 8 wedges and lay them out in a single layer across 2 baking trays. Bake for 4-5 minutes, swapping trays halfway through, until the wedges are dry, crisp, and lightly golden.
  • In a saucepan over medium heat, melt butter. Add onion and cook, stirring, for 3-4 minutes until soft. Then, add chillies and cook for 1 minute until fragrant. Finish by stirring in sour cream for 1 minute until heated through.
  • Take the pot off the heat and mix in the cheese until it's melted and creamy. Enjoy right away with some tortilla chips.
