Indulge in a creamy cheese dip with a zesty touch of radishes. Perfect for pairing with sizzling fajitas.
Ingredients:
  • 30g butter
  • 4 shallots, ends trimmed, finely chopped
  • 1/2 tsp Mexican chilli powder
  • 125g (1/2 cup) Light Sour Cream
  • 120g (1 1/2 cups) coarsely grated cheddar
  • 20.00 ml drained sliced jalapeno chillies, finely chopped
  • 40.00 ml chopped fresh coriander
  • 1 bunch radishes, trimmed, washed, dried, quartered lengthways
  • 1 x 175g pkt Dippas white corn chips
Instructions:
  • In a medium saucepan over low heat, melt the butter. Sauté the shallot and garlic until softened, about 1 minute. Stir in the chili powder and cook until aromatic, about 30 seconds.
  • Fold the sour cream into the shallot mixture until well combined. Mix in the cheddar and cook, stirring continuously for 2-3 minutes until melted. Stir in the jalapeno chili and coriander. Transfer to a heatproof serving bowl and enjoy with radish and corn chips.
