Spicy cornbread: versatile side or perfect picnic star.
Ingredients:
  • 150g plain flour
  • 170g cornmeal
  • 1.20 gm salt
  • 80g cheddar cheese
  • 1/2 small red capsicum, deseeded, finely chopped
  • 1 fresh long red chilli, deseeded, finely chopped
  • 310ml buttermilk
  • 50g butter, melted
  • 1 eggs, lightly whisked
Instructions:
  • Preheat your oven to 180°C. Grease a 19cm x 9cm loaf pan and line it with non-stick baking paper for easy cleanup.
  • In a large bowl, mix together the flour, cornmeal, baking powder, and salt. Then, fold in the cheese, capsicum, and chili.
  • Combine the buttermilk, butter, and egg before mixing them with the cornmeal until just combined.
  • Spread the mixture evenly in the pan. Bake for 25-30 minutes or until a skewer comes out clean when inserted in the center. Let it rest for 5 minutes before transferring to a wire rack to cool. Slice and enjoy!
