Chilli pineapple beef stir-fry

Delicious, low-fat, budget-friendly dish ready in under 30 minutes.
Ingredients:
  • 600g stir-fry beef
  • 1 large red chilli, seeded & finely chopped
  • 42.00 gm soy sauce
  • 36.80 gm vegetable oil
  • 1/2 sweet pineapple, peeled, cored and cut into 2cm pieces
  • 1 red capsicum, seeded and cut into 7cm julienne strips
  • 1 bunch shallots, cut into 7cm julienne strips
  • 80.63 gm plum sauce
  • 2.50 gm cornflour
  • 20.00 gm cold water
  • 125.00 ml fresh coriander leaves
Instructions:
  • Thinly slice the stir-fry beef and mix it in a bowl with chili, garlic, and soy sauce. Season with pepper and mix well. Cover and refrigerate until needed.
  • In a sizzling wok, heat 1 tablespoon of oil over high heat. Cook beef in batches for 2 minutes each until golden brown, then transfer to a plate. Add more oil to the wok and stir-fry pineapple and capsicum for 3 minutes. Toss in shallots and cook for an additional minute before removing from the wok.
  • Add the beef back to the wok along with the plum sauce and heat gently. Stir in the mixture of cornflour and water, bringing it to a boil while stirring. Once thickened, remove from heat.
  • Top the beef with a colorful mix of pineapple, capsicum, and shallots, then sprinkle with fragrant coriander leaves. Enjoy with steamed brown rice on the side.
