Chilli-glazed pineapple

Get creative with vibrant pineapple - blend in drinks, pair with cheese, grill, or indulge in a delightful surprise dessert.
Ingredients:
  • 120g (2/3 cup, lightly packed) brown sugar
  • 40.00 gm water
  • 8 thick slices peeled fresh pineapple
  • 1 long fresh red chilli, halved, seeded, thinly sliced
  • 4 x 120g ctns frozen Pine Lime Fruit Sorbet
  • Fresh mint leaves, to serve
Instructions:
  • Combine sugar and water in a non-stick frying pan, stirring over medium heat for 2 minutes until the sugar dissolves.
  • Add half of the pineapple and half of the chili to the skillet. Cook for 2 minutes on each side until golden and caramelized. Stir to coat, then transfer to serving plates. Repeat with the remaining pineapple and chili.
  • Add a refreshing scoop of sorbet and garnish with fresh mint leaves on top of the pineapple.
