Cherry chilli-glazed roast pork with cherry salsa

Elevate your Christmas feast with a festive cherry chilli-glazed roast pork accompanied by a sweet cherry salsa.
Ingredients:
  • 2 1/5kg pork loin roast
  • 6 garlic cloves, peeled, chopped
  • 2 long red chillies, chopped
  • 2.40 gm sea salt flakes
  • 1 tsp black peppercorns
  • 1 tsp coriander seeds
  • 125.00 ml pitted cherries
  • 250g cherries, pitted, halved
  • 250.00 ml coriander leaves
  • 2 spring onions, chopped
  • 62.50 ml flaked almonds, toasted
  • Zest and juice of 1 lime
Instructions:
  • Remove rind and excess fat from pork, retie securely. Score pork with a small sharp knife, then place in a roasting pan.
  • In a small food processor, pulse garlic, chili, salt, peppercorns, and coriander seeds until finely chopped. Add cherries and blend until a paste forms. Spread over pork, pressing into the cuts. Refrigerate for 1 hour before cooking.
  • Preheat oven to 180C (160C fan). Roast pork for 30 minutes, then lower temperature to 170C (150C fan) and roast for 1 hour more or until cooked through. Cover lightly with foil and let it rest for 10 minutes before serving.
  • Prepare a flavorful cherry salsa by combining cherries, coriander, spring onion, and almonds in a bowl. In a separate container, whisk lime juice, zest, and oil together. Season the mixture, then drizzle it over the cherry blend. Gently toss everything together to combine all the delicious flavors.
  • Slice the succulent pork and elegantly serve it alongside vibrant cherry salsa.
