Make a quick and affordable family favorite for busy weeknights without the stress.
Ingredients:
  • 21.00 gm lemon juice
  • 68.75 gm sweet chilli sauce
  • 40.00 ml kecap manis
  • 2cm piece fresh ginger, peeled, finely grated
  • 4 (150g each) chicken breast fillets, trimmed
  • 82.50 ml plain flour
  • 36.40 gm peanut oil
  • 1/2 x 250g punnet cherry tomatoes, quartered
  • 1 Lebanese cucumber, deseeded, sliced
  • 62.50 ml small fresh mint leaves
  • Steamed jasmine rice, to serve
Instructions:
  • In a ceramic bowl, mix together lemon juice, sweet chilli sauce, kecap manis, and ginger. Add the chicken and ensure it is fully coated. Cover and refrigerate for 3 hours, if possible.
  • Spread a layer of flour on a plate. Remove the chicken from the marinade, keeping the marinade aside. Gently coat the chicken with flour, ensuring to shake off any extra flour.
  • Heat oil in a non-stick frying pan over medium heat. Add chicken and cook for 4 minutes on each side until nearly done. Lower heat, pour in reserved marinade, cover, and simmer for 10 minutes until sauce thickens and chicken is fully cooked. Be sure to turn the chicken occasionally.
  • Mix together ripe tomato, crisp cucumber, and fresh mint in a bowl. Serve the succulent chicken alongside the flavorful tomato mixture and fluffy rice.
