Whip up a quick and delicious sweet chili ginger glazed salmon with salad and rice in no time for a perfect weeknight meal.
Ingredients:
  • 150g caster sugar
  • 80ml white vinegar
  • 2 long red chillies, sliced
  • 5cm-piece ginger, peeled, cut into thin matchsticks
  • 4 x 200g skin-on salmon fillets
  • 18.20 gm peanut oil
  • 350g pkt Asian Style Salad Kit
  • 62.50 ml coriander sprigs
  • Steamed jasmine rice, to serve
Instructions:
  • Combine sugar, vinegar, and 1/4 cup (60ml) water in a small saucepan over low heat. Stir until sugar dissolves, then increase heat to medium-high. Bring to a simmer and add the chili and ginger. Simmer uncovered for 6-7 minutes until the glaze thickens slightly.
  • Brush the salmon with oil and grill for 3 minutes on each side on a medium-high heat barbecue plate or chargrill until cooked to your desired doneness.
  • Follow the instructions on the salad kit packet to assemble the salad.
  • Plate the salad and salmon individually. Drizzle the salmon with the glaze and sprinkle with coriander. Serve alongside steamed rice.
