Pan-Seared Salmon with Fresh Fig and Balsamic Reduction

Succulent pan-seared salmon over hot pasta with fig balsamic reduction - a delightful dinner for two.
Ingredients:
  • 1 cup rotini pasta
  • 2 tablespoons salted butter
  • 1 cup chopped fresh figs
  • 0.5 cup balsamic vinegar
  • 0.5 cup chicken stock
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh thyme
  • 2 (5 ounce) salmon fillets
  • salt and ground black pepper to taste
  • 1 tablespoon salted butter
Instructions:
  • Boil a large pot of salted water and cook rotini until al dente, about 8 minutes. Drain and set aside.
  • While the pasta is cooking, melt butter in a skillet over medium heat. Saute figs in the melted butter until browned. Add balsamic vinegar, chicken stock, honey, and thyme; simmer until sauce thickens. Keep warm over low heat.
  • Season salmon liberally with salt and pepper. Heat 1 tablespoon of butter in a skillet over medium-high heat until sizzling. Sear salmon on both sides until golden brown. Lower the heat to medium and cook until the salmon is flaky, approximately 7 minutes.
  • Plate the pasta onto two dishes. Place a salmon fillet on top of each portion and drizzle the reduction evenly over both plates.
