Pan seared salmon with zesty avocado sauce made with lime, olive oil, shallots, parsley, and Dijon.
Ingredients:
  • 2 large avocados, cut and peeled
  • 3 tablespoons freshly squeezed lime juice (can substitute lemon)
  • 3 to 4 tablespoons extra virgin olive oil
  • 1 tablespoon shallots or green onion, minced
  • 1 tablespoon parsley, minced
  • 1 teaspoon Dijon mustard or to taste
  • Salt and pepper to taste
  • 1 to 1 1/2 pounds salmon fillets
Instructions:
  • Prepare the avocado remoulade sauce by blending avocado pieces and lime juice in a food processor or blender until smooth. Gradually incorporate olive oil until desired consistency is reached. Mix in minced shallots (or green onions) and parsley until just combined. Transfer to a bowl and season with mustard, salt, and pepper to taste.
  • Heat oil in a sauté pan over medium-high heat. Season both sides of salmon with salt and pepper. Place fillets in the pan and adjust heat to medium. Cook for 3-4 minutes per side until medium doneness, adjusting skin position based on preference.
  • Serve the perfectly cooked salmon alongside a creamy and flavorful avocado remoulade sauce.
