Chilli salt prawns

Chinese prawns (har) symbolize joy and are a popular seafood choice in Chinese celebrations.
Ingredients:
  • 40.00 ml plain flour
  • 20.00 gm rice flour
  • 9.60 gm salt
  • 2 tsp white pepper
  • 2 tsp chilli powder
  • 1 1/2 tsp Chinese five spice
  • 2L (8 cups) peanut oil
  • 18 (about 1kg) green large king prawns, peeled leaving tails intact, deveined
  • 6 sprigs fresh coriander
  • Lemon wedges, to serve
Instructions:
  • In a bowl, mix together plain flour, rice flour, salt, white pepper, chili powder, and Chinese five spice.
  • Preheat your oven to 160°C. Layer a baking tray with 5 paper towels. In a large saucepan or wok, heat the oil to 190°C over medium heat (test readiness by seeing a bread cube turn golden brown in 10 seconds).
  • Dredge a quarter of the prawns in the flour mixture, ensuring they are well coated, then shake off any excess flour. Cook them in the oil, stirring constantly, until golden brown, about 1 minute. Use a slotted spoon to transfer the prawns to a lined tray and keep warm in the oven. Repeat this process for the remaining prawns in three more batches, making sure to reheat the oil between each batch.
  • Add the coriander to the oil and quickly cook until crispy, about 10 seconds. Transfer to a plate lined with paper towel. Arrange prawns on a platter, sprinkle with crispy coriander, and serve with lemon wedges.
