Elevate your Christmas spread with delectable homemade flatbreads topped with juicy prawns and crisp zucchini.
Ingredients:
  • 375g self-raising flour
  • 4.00 gm baking powder
  • 0.60 gm salt
  • 330ml buttermilk
  • 2 zucchini, peeled into ribbons
  • 4 yellow squash, thinly sliced
  • 1 long red chilli, seeded, finely chopped (optional)
  • 40.00 ml white wine vinegar
  • 300g tub Danish Fetta, drained reserving 2 tbsp marinade
  • 24 cooked prawns, peeled leaving tails intact, deveined
Instructions:
  • In a large bowl, combine the flour, baking powder, and salt. Mix in the buttermilk until just combined. Transfer the dough to a lightly floured surface and knead for 1 minute until it comes together. Place the dough in a medium bowl, cover it with a damp tea towel, and let it rest for 30 minutes.
  • Combine zucchini, squash, optional chili, vinegar, and reserved feta marinade in a medium bowl. Gently mix to combine, season, then set aside for 5 minutes to enhance the flavors. Transfer to a serving bowl and sprinkle with feta. Enjoy!
  • 1. Divide the dough into 8 portions and shape them into ovals that are 3mm thick and 20cm long on a lightly floured surface. 2. Preheat a barbecue grill or chargrill on high. 3. Grill the flatbreads in batches for 1-2 minutes on each side until they are charred and cooked through.
  • Arrange the prawns in a stylish serving bowl alongside the flatbreads and zucchini salad for a delightful presentation.
