Juicy steaks, crunchy roast potatoes, and fresh dressed greens - Delightful!
Ingredients:
  • 300g small chat potatoes (about 6), halved if large
  • 27.30 gm olive oil
  • 2 tsp dried oregano
  • 1 small garlic clove, roughly chopped
  • 1/4 tsp dried chilli flakes
  • 2 x 200g scotch fillet steaks
  • 100g baby green beans, topped, blanched, refreshed in iced water
  • 40g rocket leaves
  • 20.60 gm French salad dressing
Instructions:
  • Preheat the oven to 190°C and line a small baking dish with baking paper.
  • Toss the chat potatoes with olive oil, dried oregano, and sea salt flakes in the dish. Roast in the oven for 30 minutes until crispy and tender.
  • Combine garlic, chili flakes, remaining dried oregano, and 2 teaspoons of sea salt flakes in a mortar and pestle. Pound until well blended. Massage the garlic mixture onto the steaks.
  • In a large heavy-based frypan over high heat, sizzle the last 1/2 tablespoon of olive oil until it shimmers. Sear the steaks for 3 minutes on each side for medium-rare or to your desired doneness. Rest the steaks on a warm plate, tented lightly with foil, for 5 minutes before serving.
  • Combine the baby green beans, wild rocket, and French dressing in a bowl, then toss together until well mixed.
  • Present the steaks alongside the potatoes and salad.
