Chinese barbecue pork recipe

Marion Grasby's affordable and irresistible Chinese sticky pork will become your family's go-to meal at $3.90 per serving.
Ingredients:
  • 1.5kg boneless pork shoulder
  • Steamed rice, to serve
  • Blanched Asian greens, to serve
  • Sliced cucumber, to serve
  • 60ml (1/4 cup) hoisin sauce
  • 60ml (1/4 cup) Chinese cooking wine
  • 60ml (1/4 cup) honey
  • 60ml (1/4 cup) soy sauce
  • 60ml (1/4 cup) beetroot juice (see tip)
  • 48.80 gm oyster sauce
  • 55g (1/4 cup, firmly packed) brown sugar
  • 3 garlic cloves, finely grated
  • 2.40 gm sea salt flakes
  • 1/2 tsp Chinese five spice
Instructions:
  • Cut the pork into 3 long strips lengthwise.
  • Prepare the marinade by mixing all ingredients in a large bowl. Add the pork and coat well. Cover and refrigerate overnight for optimal flavor infusion.
  • Preheat oven to 180°C/ 160°C fan forced. Line a roasting pan with foil and place a baking or roasting rack on top. Transfer the pork from the marinade to the rack, keeping the marinade for later.
  • Fill the bottom of the roasting pan with water, ensuring it is below the pork. Roast for 20 minutes.
  • Pour the marinade into a saucepan and simmer over medium heat for 5 minutes until slightly thickened. Transfer half into a serving bowl for the pork and keep the rest in the pan for basting.
  • Coat the pork generously with half of the sauce, ensuring both sides are well glazed. Roast in the oven for 20 minutes or until fully cooked. Brush the pork with the remaining sauce. Let it rest for 10 minutes before slicing. Serve with rice, greens, cucumber, and extra sauce on the side.
