Elevate your salad game with this Asian-inspired dish featuring barbecue pork and rice noodles.
Ingredients:
  • 100g vermicelli rice noodles
  • 40.00 ml rice vinegar
  • 1 small red chilli, seeds removed, finely chopped
  • 80ml soy sauce
  • 1 tsp sesame oil
  • 21.00 gm fresh lime juice
  • 100g Asian salad greens
  • 100g snow peas, trimmed, blanched
  • 20.00 ml pickled ginger (see note)
  • 1 yellow or red capsicum, thinly sliced
  • 300g Asian barbecue pork (see note), thinly sliced
  • 50g Japanese rice crackers, roughly broken, to serve
Instructions:
  • Place noodles in a bowl and pour over boiling water. Let sit for 5 minutes, then drain and rinse with cold water. Drain well.
  • In a bowl, whisk together vinegar, chili, soy sauce, oil, and juice. Combine greens, peas, ginger, bell pepper, and pork. Toss with noodles and the prepared dressing. Serve alongside some crispy crackers.
