Gather around to make homemade Chinese dumplings for a festive experience.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons kosher (coarse) salt
  • 1/2 cup boiling water
  • 1/2 cup cold water
  • 3/4 lb ground chicken
  • 2 green onions, finely chopped
  • 2 teaspoons sugar
  • 1 teaspoon ground ginger
  • 2 teaspoons rice vinegar
  • 2 teaspoons soy sauce
  • Dash crushed red pepper flakes
  • Ground black pepper to taste
  • Canola oil
Instructions:
  • Combine flour and salt in a medium bowl. Slowly mix in boiling water. Gradually incorporate cold water, stirring continuously until dough forms. Knead dough on floured surface until smooth, adding more flour if needed. Cover with a damp towel and let it rest for 20 minutes.
  • In a large bowl, combine all the Filling ingredients. Cook the Filling in a 10-inch skillet over medium-high heat, breaking up the chicken into crumbles as it cooks, until no longer pink. Remove from heat.
  • In a lightly floured shallow baking pan, shape the potstickers: take 1 tablespoon of dough, roll it into a 3- to 4-inch round, place 1 tablespoon of filling in the center, fold over the dough, seal the edges, and crimp if desired. Arrange the potstickers in the floured pan.
  • Boil potstickers in salted water until cooked, then transfer to a skillet with heated oil to brown. Be cautious of spattering. Serve with soy sauce.
