Quick and flavorful Chinese chicken noodle soup with turmeric, chile paste, ginger, and soy - a one-pot delight!
Ingredients:
  • 2 tablespoons sesame oil
  • 2 teaspoons chopped fresh ginger root
  • 2 tablespoons chile paste
  • 0.5 teaspoon ground turmeric
  • 1 pound chopped cooked chicken breast
  • 1 quart chicken broth
  • 1 cup chopped celery
  • 2 teaspoons sugar
  • 1 (3 ounce) package ramen noodles
  • 1 cup shredded lettuce
  • 0.5 cup chopped green onion
Instructions:
  • In a large pot over medium heat, warm sesame oil. Stir in ginger, chile paste, and turmeric, cooking until fragrant, about 1 to 2 minutes.
  • Combine the chicken, broth, celery, soy sauce, and sugar in the pot and bring to a boil. Add the noodles and simmer for 3 minutes.
  • Gently fold in fresh lettuce and take the pan off the heat. Finish by serving the dish topped with aromatic green onions.
