Spicy chicken and bok choy ramen with peanut butter and sriracha for a flavorful twist.
Ingredients:
  • 6 cups chicken broth
  • 1 bunch green onions, sliced
  • 4 cups chopped bok choy
  • 1 small carrot, cut into 1/4-inch dice
  • 1 small stalk celery, cut into 1/4-inch dice
  • 0.25 cup soy sauce
  • 2 tablespoons ginger root, peeled and minced
  • 1 tablespoon creamy peanut butter
  • 2 teaspoons sriracha sauce
  • 3 cloves garlic, minced
  • 1 teaspoon white sugar
  • 1 (12 ounce) package ramen noodles
  • 1 cup chopped cooked chicken
Instructions:
  • In a stockpot, bring chicken broth to a lively boil over medium heat. Add green onions and simmer gently for 1 to 2 minutes to enhance flavors. Stir in bok choy, carrot, celery, soy sauce, ginger, peanut butter, sriracha, garlic, and sugar. Continue simmering until veggies are tender, approximately 10 minutes.
  • In a large pot, bring salted water to a rolling boil. Add ramen noodles and cook until al dente, stirring occasionally, for 2 to 5 minutes. Drain and serve in individual bowls.
  • Add the chicken to the flavorful broth and let it simmer until heated through, approximately 4 minutes. Then, ladle the piping hot soup over the noodles and get ready to enjoy!
