Chinese chicken noodle soup

Spicy chicken noodle soup: a comforting winter dinner favorite.
Ingredients:
  • 220g packet thin hokkien noodles
  • 510.00 gm salt-reduced chicken style liquid stock
  • 120g mixed vegetables
  • 10.60 gm salt-reduced soy sauce
  • 1/2 tsp sambal oelek (see note)
  • 150g cooked chicken
  • 2 green onions, chopped
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 4 to 5 minutes or until tender. Use a fork to separate the noodles and then drain them.
  • 1. In a saucepan, bring the stock to a boil over high heat. 2. Add vegetables and cook for 1 to 2 minutes until just tender. 3. Stir in soy sauce and sambal oelek. 4. Divide noodles into bowls and top with chicken, onion, and stock mixture. 5. Serve and enjoy!
