Satisfy your love for Asian flavors with this high-fiber Chinese chicken dish, topped with a zesty green dressing of ginger, chili, coriander, and green onions. A delicious, low-fat meal you won't be able to resist!
Ingredients:
  • 500g chicken breast fillets
  • 48.80 gm oyster sauce
  • 18.40 gm vegetable oil
  • 1 bunch baby pak choy, quartered lengthways
  • 1 bunch choy sum, trimmed
  • 1 bunch gai lan, trimmed, halved
  • 150g snow peas, trimmed
  • 62.50 ml fresh coriander leaves
  • Lime wedges, to serve
  • Cooked rice stick noodles (optional), to serve
  • 57.50 gm vegetable oil
  • 8cm piece fresh ginger, peeled, finely grated
  • 8 green onions, thinly sliced
  • 1 long green chilli, seeded, finely chopped
  • 20.00 ml finely chopped fresh coriander stems
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
Instructions:
  • Take the chicken and place it in a glass or ceramic dish. Drizzle oyster sauce over it and gently mix until coated. Cover the dish and refrigerate for 30 minutes, if possible.
  • In a large frying pan over medium heat, heat vegetable oil. Cook chicken, turning occasionally, for 8 to 10 minutes until golden brown and fully cooked. Rest for 5 minutes before serving.
  • Prepare the warm green dressing by heating vegetable oil in a saucepan over medium-high heat. Sauté ginger, onion, chili, coriander stems, and garlic for 2 minutes until the onion is bright green. Remove from heat and cool for 5 minutes. Stir in sesame oil, season with salt, and set aside.
  • Steam the baby pak choy, choy sum, and gai lan in a large steamer over simmering water until tender and just starting to wilt, about 5 minutes. Add snow peas in the last 2 minutes of cooking.
  • Separate greens evenly onto serving dishes. Arrange sliced chicken on top. Drizzle dressing generously over the chicken. Garnish with fresh coriander leaves. Serve with lime wedges and rice noodles on the side, if desired.
