Spicy Chinese mapo tofu combines ground pork, firm tofu, hot bean sauce, garlic, ginger, and sesame oil for a flavorful and fast meal.
Ingredients:
  • 1 tablespoon cold water
  • 1 teaspoon cornstarch
  • 0.5 pound ground pork
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger root
  • 1 (16 ounce) package firm tofu, cut into 1 inch pieces
  • 5 tablespoons soy sauce
  • 2 tablespoons hot bean sauce
  • 1 teaspoon white sugar
  • 3 green onions, chopped
  • 1 teaspoon sesame oil
Instructions:
  • Combine water and cornstarch in a small bowl, and let it sit.
  • In a small skillet over medium-high heat, sear the ground pork until golden brown, approximately 5 minutes. Discard any excess fat.
  • In a large skillet or wok, heat oil over medium-high heat. Sauté garlic and ginger until fragrant, for about 1 minute. Add tofu and cook for 2 minutes. Season with soy sauce, hot bean sauce, and sugar, then mix everything well.
  • Add the cooked pork and green onion, then sprinkle with the cornstarch and water mixture. Cook and stir until thickened, approximately 2 minutes. Finally, incorporate the sesame oil into the thickened mapo tofu.
