Delicious Asian-inspired shrimp and mushroom rice dish bursting with flavor.
Ingredients:
  • 25g butter
  • 25g dried Chinese mushrooms
  • 25g dried Chinese shrimp
  • 200ml vegetable liquid stock
  • 18.20 gm peanut oil
  • 1 medium onion, finely sliced
  • 1 garlic clove, crushed
  • 300g jasmine rice
  • 225g Swiss brown mushrooms, sliced
  • 42.00 gm light soy sauce
  • 1 (about 100g) Chinese sausage (Lop Chong)*, thinly sliced
  • 1 bunch chives, chopped
  • Lime, thinly sliced, to serve
Instructions:
  • Combine dried mushrooms and shrimp in a heat-proof bowl. Pour 300ml boiling water over them and let soak for 15 minutes. Drain, reserving the liquid.
  • Slice the mushrooms and set them aside. Pour the stock into the reserved liquid, which should total around 500ml.
  • In a large frying pan, melt butter and oil over low heat. Sauté onion until softened, about 2 minutes. Add garlic and rice, cook for 1 minute. Stir in mushrooms, shrimp, and Swiss brown mushrooms. Pour in half of the liquid, bring to a boil over high heat. Reduce heat, cover, and simmer for 10 minutes. Uncover, add remaining liquid, soy sauce, and Chinese sausage. Bring back to a boil, then simmer covered for 5 more minutes. Finish by stirring in half of the chives.
  • Garnish with the remaining chives and lime before serving.
