Asian style roast pork salad: Juicy tender pork paired with vibrant Asian flavors.
Ingredients:
  • 86.63 gm salt-reduced light soy sauce
  • 2 garlic cloves, crushed
  • 1 tsp Chinese five-spice powder
  • 500g pork fillet, trimmed
  • 18.20 gm olive oil
  • 100g packet baby Asian greens
  • 1 red capsicum, deseeded, cut into thin strips
  • 100g shiitake mushrooms, thinly sliced
  • 2 nashi pears, peeled, cored, thinly sliced
  • 125.00 ml coriander leaves
  • 125.00 ml mint leaves
Instructions:
  • In a shallow ceramic dish, mix together soy sauce, garlic, and Chinese five-spice. Add the pork and ensure it is well coated. Cover and refrigerate for a minimum of 2 hours.
  • Preheat your oven to a perfectly warm 200°C. Drain the pork, but don't discard the flavorful marinade. Place the pork in a shallow roasting pan and let it roast until perfectly cooked, about 15 to 20 minutes. Once done, transfer the pork to a plate, cover it, and let it rest for 5 minutes before savoring your creation.
  • In a small saucepan, combine the reserved marinade with 2 tablespoons of water. Bring to a boil over high heat, then reduce heat to medium and simmer for 3 minutes. Transfer the mixture to a bowl and whisk in the oil. Allow it to cool before using.
  • Slice the pork thinly against the grain. In a large bowl, mix Asian greens, capsicum, mushroom, pear, coriander, and mint. Add the pork and dressing, then toss everything together. Serve.
