Chipotle Grilled Chicken with Avocado Sandwich

Spicy chipotle seasoned grilled chicken paired with creamy avocado in a mouthwatering sandwich.
Ingredients:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon chipotle chile powder (less or more depending on how much heat you want)
  • 1 pound boneless skinless chicken breasts (about 2 breast halves)
  • 4 small slices of Monterey Jack cheese
  • 4 sets of hamburger buns
  • 1 avocado, peeled, seeded and sliced
  • Iceberg or lettuce of preference
  • Mayonnaise
Instructions:
  • Prepare the flavorful marinade by combining olive oil, lime juice, and chipotle chile powder in a shallow bowl.
  • Tenderize and flatten chicken: Sandwich the chicken breasts between wax paper and gently pound with a meat tenderizer until they are an even 1/2 inch thickness. Trim any excess fat. If starting with 2 half-pound chicken breast halves, slice each in half to make 4 pieces.
  • Coat chicken breasts in marinade, cover with plastic wrap, and marinate for at least 15 minutes, ideally 1 hour.
  • Preheat your grill on high heat for gas grills or prepare coals for direct heat for charcoal grills. If you don't have a grill, you can use a cast-iron grill pan on the stove. Grill the chicken until cooked through, about a couple minutes per side. When you flip the chicken, place a slice of cheese on top and close the grill for 30 seconds to melt it. Toast the buns on the grill.
  • Stack: Layer the sandwiches - bottom bun, chicken topped with melted cheese, avocado, lettuce, and mayo-covered top bun.
