Spicy beer-battered cod fish tacos, great for family gatherings on sunny days.
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper
  • 8 ounces Mexican beer
  • 1 egg
  • 0.5 cup mayonnaise
  • 2 canned chipotle peppers in adobo sauce, seeded and minced
  • 1 tablespoon adobo sauce from chipotle peppers
  • 0.5 lime, juiced
  • oil for frying
  • 1 pound cod fillets, cut into 2-inch chunks
  • 0.33333334326744 cup all-purpose flour
  • 0.125 teaspoon kosher salt
  • 1 (10 ounce) package 6-inch flour tortillas
  • 1 head lettuce, shredded
  • 1 (8 ounce) package crumbled queso fresco
  • 1 tomato, diced
  • 0.5 red onion, diced
  • 0.25 cup chopped fresh cilantro
  • 1 fresh lime, cut into wedges
Instructions:
  • In a bowl, mix together flour, cornstarch, baking powder, salt, garlic powder, and cayenne pepper. Add beer and egg, and stir until well combined.
  • Combine creamy mayonnaise with spicy chipotle peppers, smoky adobo sauce, and zesty lime juice in a bowl.
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • Dust cod pieces with 1/3 cup flour until fully coated, shaking off any extra. Dip in beer batter. Fry cod in batches until golden brown, about 4 to 5 minutes. Drain on paper towels, sprinkle with salt before serving.
  • Lay the crispy cod pieces on the tortillas and generously add layers of lettuce, queso fresco, tomato, red onion, cilantro, and a drizzle of flavorful chipotle-lime sauce. Accompany with fresh lime wedges for a burst of citrus flavor.
