Quinoa with Chipotle-Lime Dressing

Flavorful chipotle lime quinoa - a versatile and effortless dish, perfect as a side or main.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 large tomato, chopped
  • 1 yellow bell pepper, chopped
  • 1 avocado, diced
  • 0.5 cup firmly packed chopped fresh cilantro
  • 1 lime, juiced
  • 2 tablespoons Greek yogurt
  • 1 chipotle chile pepper in adobo sauce, sauce reserved
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • salt and ground black pepper to taste
Instructions:
  • In a pot over medium-high heat, warm 1 tablespoon of olive oil. Cook the onion in the oil until softened, around 5 minutes. Add the quinoa to the onion and cook until toasted and fragrant, about 2 minutes.
  • Add broth to the quinoa mixture and simmer covered on low heat until all liquid is absorbed, around 20 minutes.
  • Combine the black beans, tomato, bell pepper, and avocado in a bowl and gently mix.
  • Combine cilantro, lime juice, olive oil, Greek yogurt, chipotle pepper, reserved adobo sauce, honey, cumin, salt, and black pepper in a blender; blend until smooth dressing forms.
  • Drizzle the dressing over the black bean mixture, then add the quinoa and mix well until everything is evenly coated.
