Sweet and spicy quinoa - versatile as a main or side.
Ingredients:
  • 0.25 cup olive oil
  • 1 yellow onion, diced
  • 2 carrots, grated
  • 1.25 cups raisins
  • 1 tablespoon pumpkin pie spice
  • 1.5 cups quinoa
  • 0.75 cup chopped cilantro
  • 1.5 cups orange juice
  • 1.5 cups water
  • 0.25 cup chopped walnuts
Instructions:
  • In a large saucepan over medium heat, sauté onion, carrots, raisins, and pumpkin pie spice in olive oil until onion is golden. Add quinoa and cilantro, toast briefly, then pour in orange juice and water. Bring to a boil, reduce heat, and simmer until liquid is absorbed. Let rest off the heat for 5 minutes, then mix in walnuts before fluffing with a fork and serving.
