Savory breakfast potatoes cooked with bacon, chives, onions, and peppers for a delicious and simple side dish.
Ingredients:
  • 1 pound red potatoes
  • 0.25 cup olive oil
  • 0.25 cup diced bacon
  • 0.25 cup diced red bell pepper
  • 0.25 cup diced red onion
  • 0.25 cup chopped fresh chives
  • 1 teaspoon chopped fresh thyme
Instructions:
  • In a large pot, simmer potatoes in salted water until just tender, about 15-20 minutes. Be careful not to overcook. Drain and cool in the refrigerator for at least 8 hours or overnight with skins on for added color and flavor.
  • Dice the potatoes into bite-sized pieces.
  • Preheat a large saute pan over high heat until smoking hot. Add olive oil and potatoes; cook until starting to brown, about 6 minutes. Add bacon and cook until golden, about 2 to 3 minutes. Toss in onions and peppers; saute for another 2 to 4 minutes. Remove from heat, season with salt and pepper, and top with chives and thyme for a flavorful finish.
